Day 348: Eat a Gluten-Free Food

Today's Positivity activity: Make or purchase something gluten-free to include in my diet.

On Thursdays I post a food and/or health related challenge. Last week, I cut out processed cold cereal. Today, I'm going a step farther by introducing some gluten-free options into my routine. Not everyone is sensitive to gluten, but I personally find I feel healthier, more energetic, and lose weight easier when I've limited flour-based products.

The Results: Done! I made these awesome gluten-free muffins that the family really enjoyed. (No flour! Just eggs, nut butter, banana, apple, dates, vanilla, and baking soda.) Took some along in my lunch at work. Yum!
