On Thursdays I post a food and/or health related challenge. And for a long while now, potatoes have been on the naughty list at our house. With their high starch content, they aren't something I eat often.
That said, potatoes have their place in the nutrient hall of fame. Rich in vitamin B, vitamin C, and potassium, they also contain antioxidants and fiber. So today I'll have a humble offering of baked potato. Is it a coincidence that today, millions of potatoes will be consumed for Thanksgiving in the US? Nope. :)
The Results: Well, the "baked" potato became a homemade mashed potato since the family reallly wanted that to go with their turkey. Yet baked and mashed are pretty close to the same thing, with the addition of some milk. (Although perhaps some of the nutrients are better preserved by baking the taters inside their "jackets" rather than boiling them.)
