On Thursdays I post a food and/or health related challenge. Today, it's time to switch the chef's hat out for a thinking cap and come up with something new! You needn't be a great cook, nor does the recipe need to be complicated. For instance, the other day I made a sandwich and decided to mix a few drops of sriracha sauce into the mayonnaise. Wow, what a lift! Even the simplest "invention" can spice up a meal or snack. So come lunch/snack/dinner time today, pull open the cupboards, look at what you have on hand, and combine! Most important, have fun.
The Results: My daughter had an activity scheduled for tomorrow's health class--a lesson in mindfulness involving chocolate! So to give us something chocolaty to use, I invented a semi-healthier chocolate candy (healthier than a store bought bar, at least). I mixed organic peanut butter, coconut oil, organic cocoa, and some powdered sugar, then dropped flattish rounds onto a cookie sheet, then stuck them in the freezer. They melt in your mouth and are quite yummy! Plus it was quick and fun.
